1    Cut chicken into 1/2-inch cubes. Set aside.
2    Mix celery, mayonnaise, mustard and parsley in a bowl. Add chicken and toss to coat.
3    Season to taste with salt and freshly ground black pepper.

12 oz    boneless skinless chicken
1    stalk celery, chopped
3 tbsp    mayonnaise
1 tsp    dijon mustard
1 tbsp    chopped fresh parsley
