Grandma's Pineapple Upside Down Sponge Cake
Prep Time:  20 minutes Cook Time:  40 minutes
Yield:  10 " Round cake pan
Notes: I used a 8 X 8 square dish

1    Melt butter in cake pan. Mix in brown sugar. Arrange pineapple slices over brown sugar. Fill in the spaces with maraschino cherries. Put aside.
2    Beat egg yolks until very thick, gradually add sugar and continue beating. Add water mix well and add sifted dry ingredients, add juice and mix until smooth. Fold in egg whites.
3    Pour batter over pineapples. Bake 40 min. In a 325 oven. Cool for 10 minutes and invert on plate. Enjoy!

1/4 cup    butter
2/3 cup    Brown Sugar
6    Pineapple slices
2    Egg yolks
3/4 cup    sugar
1/4 cup    boiling water
3/4 cup    Cake Flour
1/8 tsp    salt
1/2 tsp    baking powder
1 tsp    pineapple juice from can
2    stiff beaten egg whites
