Cream of Broccoli Soup

Notes: You can probably substitute a mild cheddar for the American Cheese. 8 oz. of cheese is about 2 cups.

1    In a 3 quart sauce pan, bring 1 1/2 cups of water to a boil; add broccoli and onnion and boil for 10 - 12 minutes.
2    Add seasonings and shredded cheese; stir until cheese melts. Add milk, cream and butter; stir and heat to boiling.
3    Slowly add water to flour; stirring constantly until texture is smooth. Slowly add to hot mixture; stirring rapidly. Cook and stir until soup is consistency of heavy cream.
4    I do not add the flour mixture to the soup. I use my immersible blender and blend the broccoli well before adding the cheese.

10 oz    frozen chopped broccoli
3/4 cup    finely chopped onionn
2 tsp    salt
2 tsp    white pepper
1 tsp    garlic powder
8 oz    American cheese, shredded .2 c
1 cup    milk
1 cup    cream
1/4 cup    butter
1/3 cup    flour
1/2 cup    cold water
