Avacado Zucchini Soup

1    Heat oil in a large saucepan over medium heat. Add 2/3 of the green onions and cook 3 minutes; stir in ginger and garlic and cook, stirring, 1 minute more. Add broth, water, zucchini, salt, and pepper.
2    Cover and cook 10 minutes, until zucchini is very soft. Cool slightly. Then, stir in avocado.
3    Puree soup in batches in a food processor or blender. Return to pan to heat through and stir in lemon juice.
4    Garnish with red pepper and remaining green onions.

2 tbsp    extra virgin olive oil
4    green onions, chopped
1 tsp    ginger root, grated
1    clove garlic, chopped
29 oz    vegetable broth
1 cup    water
2    medium zucchini, thinly sliced
1/2 tsp    salt
1/4 tsp    pepper
1    Hass avocado, chopped
1 tbsp    lemon juice
1 tbsp    chopped red bell pepper
